More understanding, less mystery: milkers get it

Iowa may soon have as many milking coaches as lactation consultants.   After a lapse of about four decades, human breastfeeding has secured its place once again in our culture as the premiere way to nourish an infant.  In a parallel narrative, fresh wholesome milk from cows, sheep, and goats is regaining its reputation as a premiere health food.   To boost that growing reputation, milking coaches are pulling up another milking stool to help people learn more about the realities of milk fresh from the udder.  
 
“We've only used manmade milk (formula and pasteurized milk) for around 60 to 70 years but we've used breast milk and raw milk for 6000 years.   If it wasn't for breast milk and raw milk, we wouldn't be here!” says Brad Hopp, a milking coach near Lawton in northwestern Iowa .   “Learning more about milking helps people understand it better, and I'm all for that.”
 
Although mothers' milk retains some of its mystery in the face of scientific inquiry, mothers these days know how precious it is to their babies' health and growth.   A little mystery in the food supply passes when it's balanced by strong instincts and a solid record of success.   But mystery can feel uncomfortable when it strays too far from knowledge and experience.
 
“The idea of raw milk feels exotic and mysterious to many people in Iowa ,” says Christy Ann Welty, homeschooling mother of two who helps milking coaches and new milkers find each other.   “More understanding and less fear will help everyone as they make decisions about the best ways to feed their families.”

A second meaning of the phrase relates to Iowa state law.  
 
Drinking wholesome, fresh milk — fresh from a healthy, grass-fed cow, sheep, or goat without processing through a pasteurization vat — has been illegal since 1968 for most people living in Iowa .   The privilege of choosing whether to drink milk fresh or pasteurized is reserved to the few who control livestock, land, and have mastered the skill of milking; everyone else is restricted to only Grade A pasteurized milk, except for those who are willing to operate in the gray areas of the law.   “Giving away milk is not covered by our rules,” says Dustin VandeHoef, communications director for the Iowa Department of Agriculture and Land Stewardship (IDALS), “but all sales are illegal.”
 
Passages from Chapter 192 of the Iowa Code (state law) say, “Only grade 'A' pasteurized milk and milk products shall be sold to the final consumer, or to restaurants, soda fountains, grocery stores, or similar establishments;” and later, “No person shall within the state produce, provide, sell, offer, or expose for sale, or have in possession with intent to sell, any milk or milk product which is adulterated or misbranded;”  
 
VandeHoef says, “We interpret the words 'adulterated' and 'misbranded' to include raw milk, and this is also the FDA [Food and Drug Administration] interpretation which is adopted into the Code.”
 
The IDALS interprets “sales” to mean “exchanges of value.”   During a phone call to his office, VanderHoef was reluctant to specify which circumstances would be considered prosecutable and which would be outside IDALS's rules.  
 
A broad interpretation of the meaning of “sales” puts giving away raw milk, and even drinking raw milk from one's own animal, into the gray area between legal and illegal: renting a stall in a farmer's barn to shelter your cow if you do not have a barn; bringing a sandwich to the person milking your goat for you; bringing a bottle of wine to a dinner party where the hostess serves raw milk.   Membership in a private kitchen club could be interpreted as a “sale” if one of the members gives away samples of raw milk.  
 
To steer clear of potential gray market entanglement, all milking lessons from “milkers get it” coaches are free, and no donations are accepted.   “We're not trying to get around the law,” says Welty.   “Our purpose is to pass along a valuable skill to people who want to be self-sufficient or live a sustainable lifestyle or simply exercise choice about the food they eat.”

In order to exercise the simple choice of “Fresh or Pasteurized” without engaging black markets or gray markets, a person has to learn how to milk and has to control livestock plus enough land to support it.   One mission of “Milkers get it” is to help people overcome barriers that state law and bureaucracy have erected.   Another mission is to assist efforts to change the state law.
 
Challenging the statute with a court case is lengthy and expensive.   One current lawsuit disputes one circumstance in the gray area of the law: Freitag v Secretary of Agriculture was filed in January 2010 and litigation continues in Linn County 's district court.   Representing two milkers who boarded their cow with a Linn County farmer, the Farmer-to-Consumer Legal Defense Fund “is acting in the capacity of a public interest law firm to protect the fundamental rights of the public at large ….”
 
Changing the statute directly with new legislation is another option.   Small-scale dairy farmers, health food customers, legislators, and many others worked together during Iowa 's 2011 legislative session to lift restrictions against consumers buying raw milk directly from farmers.   “We made progress,” says Francis Thicke, organic dairy operator and former candidate for Iowa Secretary of Agriculture, “but not enough to pass it this year.   We'll try again next year.”
 
Meanwhile, you can pull up a three-legged stool and try a free milking lesson for yourself, and encourage your state legislators to get some hands-on experience, too.   Accurate information and authentic experience are often the best tools for changing engrained habits of mind and for updating rules and procedures.   Milking coaches are ready to introduce all comers to the wholesome experience of squirting fresh milk from the udder of a healthy animal into a warm, foamy pail of milk.   When you feel the rush from a satisfying squeeze, you'll understand.   Milkers get it.

Events coming up this weekend and next week

Next Friday is “funnel” day at the Iowa legislature; with a few exceptions, all bills that haven’t been approved by at least one committee by March 4 are dead for the 2011 session. The coming week is therefore a particularly important time to contact your legislators about issues important to you. I believe lawmakers find phone calls more difficult to ignore than letters and e-mails, but by all means make contact in writing if that’s how you prefer to communicate. While contacts from their own constituents are the most meaningful, lawmakers often pay attention to contacts they receive from Iowans outside their districts too.

Iowa House Majority Leader Linda Upmeyer used to lobby for the Iowa Nurses Association before she was elected to the legislature in 2002. A few years ago she wrote up some helpful hints for persuading lawmakers, which I posted here.

Monday meal: Four dishes with cheddar cheese

The Sunday Des Moines Register included a feature on Galen Musser, the 18-year-old in charge of making Milton Creamery’s Prairie Breeze Cheddar.

The small-batch Cheddar cheese that he makes for his family’s fledgling cheese-making operation in southeast Iowa claimed a gold medal in November at the World Cheese Awards competition in London.

The only American-made Cheddar to win a medal in the extra-mature creamy category, Milton Creamery’s Prairie Breeze Cheddar was judged “the highest example of the category,” sharing honors with 10 British cheeses.

Musser said they use old-fashioned techniques to make cheese in small batches. The milk comes from 11 local Amish farmers who all milk their cows by hand.

I’ve been buying Prairie Breeze Cheese at the Gateway Market in Des Moines for years. In October I brought it and a few other Iowa selections to a reception, and several people asked me where I got that “incredible,” “amazing” cheese. It even inspired Bleeding Heartland user PrairieBreezeCheeze’s screen name. It’s great on crackers, but after the jump I’ve posted four other ways to use this flavorful cheddar cheese.

Summer stir fry thread

I don’t love the heat, but I love the produce of high summer. Last night’s dinner featured a stir-fry with local onions, carrots, kohlrabi, kale, bok choi, broccoli and Iowa-made tofu. Only the soba noodles and sauce weren’t local.

Usually I make my own stir-fry sauces. One light version is an Asian marinade from Moosewood Cooks at Home. In a small saucepan heat about 1/4 cup to 1/3 cup dry sherry, the same amount of tamari or soy sauce, half that amount of rice vinegar or cider vinegar, a tablespoon or two of brown sugar and a few slices of peeled fresh ginger. Bring to boil, stir and simmer for a minute before removing from the heat. I soak the cubed tofu in this sauce, then add it to the rest of the stir fry a couple of minutes before serving. I toss in a few tablespoons of toasted sesame oil at the end too.

I also like to make a variation on the Spicy Peanut Sauce from Moosewood’s Low-Fat Favorites. This can be drizzled over almost any steamed vegetables or added to a stir-fry near the end of cooking. To make it, throw the following in a blender: about 1/4 cup peanut butter, 1/3 cup water, 1 pressed garlic clove, a little fresh chile or dash of hot sauce, 2 Tbsp cider vinegar or rice vinegar, 1 Tbsp honey, 1 Tbsp soy sauce or tamari, 1 Tbsp lemon juice and about 2 tsp chopped fresh ginger root. Moosewood says to throw in 1/4 cup of diced tomatoes, but I leave those out. If you have extra sauce, you can keep it for a couple of weeks in the fridge (tightly sealed).

Victory for local food advocates in Cedar Rapids

Congratulations to the grassroots group Cedar Rapids Citizens for the Legalization of Urban Chickens, which helped convince a majority of City Council members to approve a one-year trial period for allowing backyard chickens. Todd Dorman of the Cedar Rapids Gazette described the group’s “pleasantly pushy” lobbying strategy. Local advocates, take note!

Many municipalities, including Des Moines, allow people to keep hens for eggs within city limits. I’ve never heard of a public nuisance problem. The main issue for the chicken owners is keeping predators away from their hens at night. Click here for more information on the benefits of keeping chickens in urban environments.

I’m glad the majority of Cedar Rapids Council members were open to persuasion and agreed to a reasonable trial period for the chickens. Not all city leaders are so willing to give new ideas a try.

I didn’t manage to compile calendars the past couple of weeks, but I wanted to get back on track today, because there are lots of newsworthy events happening in the coming week around Iowa.

I don’t think I’ll be able to make it to the DAWN’s List reception honoring outstanding Iowa Democratic women tomorrow. I’d appreciate it if someone who attends would post a comment or a diary here about the reception.

Other notable events this week include a symposium in Des Moines about Iowa’s 2008 floods, a sustainable communities conference in Dubuque, and a public workshop in Ankeny about competition and regulatory issues in the agriculture industry. Details on those and other happenings are after the jump.

We're number 32! We're number 32!

On Oprah Magazine’s new list of “100 Things That Are Getting Better”:

Legalizing gay marriage in 2009 + producing artisanal charcuterie (try La Quercia’s organic prosciutto) + University of Iowa football landing among the top 25 college teams for the fifth time this decade + ranking second on MainStreet.com‘s Happiness Index = one seriously happening Hawkeye State.

That’s an odd set of data points, but then, the whole list is rather eclectic. Iowa ranks just behind “Our reputation around the world,” “The Beatles” and “Undersea exploration” and just ahead of “Surgery,” “Wind power” and “Dental visits.”

I didn’t realize Oprah was on record supporting marriage equality, but good for her. I don’t eat prosciutto, but I’ve heard good things about La Quercia. (Oprah neglected to acknowledge Iowa’s outstanding artisan cheeses.)

Iowa ranked second on MainStreet.com’s Happiness Index because of the 50 states plus Washington, DC, we had the fourth-lowest rate of non-mortgage debt as a percentage of annual income, the fifth-lowest unemployment rate, and the sixteenth-lowest foreclosure rate. Only Nebraska scored better overall.

Now, nobody tell Oprah about our lousy water quality.

Remember, the off-year Iowa caucuses are this Saturday, January 23, at 1 pm. Democrats can click here and enter your zip code to find your caucus location. Polk County Democratic Party executive director Tamyra Harrison explained the benefits of attending an off-year caucus here.

Some non-profit advocacy organizations have drafted resolutions for supporters to offer at their precinct caucuses. If adopted, these resolutions will be forwarded to the county platform committee. For example, 1000 Friends of Iowa is encouraging supporters to offer this resolution on responsible land use.

I noticed some job listings and other helpful information in the Iowa Environmental Council’s electronic newsletter.

Value Chain Partnerships, an “Iowa-based network for food and agriculture working groups,” has a new website: www.valuechains.org.

The Environmental Law & Policy Center (ELPC) is hiring “a Policy Advocate to work in our Des Moines office to promote clean energy, clean water and conservation projects in Iowa. The level of energy and excitement won’t match the 2008 caucus, but on the plus side, you won’t be packed like sardines into a stuffy room.

There are Martin Luther King Jr. remembrances going on in many Iowa cities today and tomorrow; check your local news outlet for details. To mark King’s birthday, Democratic Senate candidate Bob Krause pledged to develop “a comprehensive strategy for alleviating the Iowa incarceration disparity,” in light of the fact that “Iowa has a per capita incarceration rate for blacks that is fourteen times the incarceration rate for whites.”

I appreciated this letter to the editor by Frank McCammond of Redfield, which the Des Moines Register published on January 15:

Marian Riggs Gelb’s Jan. 3 guest column (“Protect Iowa’s Liquid Gems”) calls for thank-you notes to the Iowa Department of Natural Resources for designating a few streams in northeast Iowa for protection as “outstanding waters.”

It was a nice suggestion. However, where do I write the note about letting the rest of the state’s river systems be turned into open sewers by the farm and livestock interests and by towns that won’t fix their sewage systems?

This blog will always be primarily about politics, but I enjoy writing about other subjects from time to time. In fact, one of my new year’s resolutions for Bleeding Heartland is to write more about food and parenting in 2010.

Year in review: Iowa politics in 2009 (part 1)

I expected 2009 to be a relatively quiet year in Iowa politics, but was I ever wrong.

The governor’s race heated up, state revenues melted down, key bills lived and died during the legislative session, and the Iowa Supreme Court’s unanimous ruling in Varnum v Brien became one of this state’s major events of the decade.

New year's resolutions thread

Clem Guttata at West Virginia Blue is pledging to reduce his carbon footprint by 10 percent and gives you 10 ways to reduce your own carbon emissions in 2010.

Jill Richardson at La Vida Locavore resolves to read “everything by Daryll Ray that I could get my hands on,” and she’s provided a bunch of links for anyone who wants to do the same.

Mamacita at Mother Talkers plans to get rid of 10 percent of the stuff in her house, start keeping a dream journal, make one new friend and get out of some ruts.

I feel so boring by comparison: get more sleep, do 20-30 minutes of cardio 5 days a week and lose 10 pounds. Also, be more patient with my kids when they are pushing my buttons, start holding regular family meetings, light candles every Friday night and read more by Marshall Rosenberg. Finally (and most unlikely to happen), de-clutter my house, little by little.

I like my chances of keeping my food resolutions, though: buy only locally produced meat from sustainable farmers, try to avoid fruits and vegetables out of season (except for frozen ones), make soup once a week during the cooler months and once a month during the summer.

Thanksgiving leftovers thread

We’ve just about polished off all the leftovers from Thanksgiving this year. I tried to keep them to a minimum by not cooking the things most people in my family don’t eat (stuffing, gravy) and cooking moderate portions of everything else. We had just the right amount of mashed potatoes and only one serving left of the salad, curried butternut squash soup and apricot-glazed beets.

Tonight we’ll finish the last of the turkey soup. I made the broth with the carcass and cut up the last bits of meat, along with some carrots.

I had more than a cup of cranberry sauce leftover, so I mixed it with a couple of diced apples and poured it into a frozen pie crust. I made a crumbly topping with oatmeal, flour, brown sugar, butter and cinnamon, spread it over the pie and baked it for about 35 minutes at 350 F.

Share your own leftover ideas in this thread. In the past I’ve used mashed potatoes to make potato pancakes, which was tasty.

Thanks to Griffieon Family Farms for the fabulous heritage turkey, the Huber Family Farm for Charlotte potatoes, which won raves, and One Step at a Time Gardens for the squash, onions, garlic, carrots, and beets.

UPDATE: I forgot that I have most of a jar of applesauce left, and no one in my family likes to eat it plain. Anyone have any good cake or quickbread recipes that use a lot of applesauce?

High-protein meals thread

I haven’t posted enough food diaries lately, so here’s a thread for protein-rich main dishes. I love my carbs, but I’ve been trying to eat less pasta, rice and other grains.

After the jump you’ll find the recipe for tonight’s dinner, which I adapted from “Ground Meat in Cashew Nut Sauce with Chick-peas” in Julie Sahni’s fantastic book Classic Indian Cooking. I highly recommend the cookbook if you want to make Indian food at home. Although it includes chapters on meat, there are plenty of good recipes for vegetarians here. I used Sahni’s book for about 10 years before I ever tried any of her meat dishes.

Last month was so busy that I didn’t manage to post any event calendars here, but I am back on duty now. The highlight of this month for Democrats is the Iowa Democratic Party’s Jefferson-Jackson Dinner on Saturday, November 21, featuring Vice President Joe Biden. You can buy tickets online.

Please note that November 10 is the deadline for public comments to the Iowa Department of Natural Resources about protecting our Outstanding Iowa Waters. State Senator Staci Appel will officially announce her re-election campaign on November 12, and I’ve posted details about a fundraiser for her campaign below the fold. Appel’s Republican opponent, State Representative Kent Sorenson, is already gearing up for next year’s election. He spent the weekend in Texas attending the WallBuilders ProFamily Legislators Conference. Here’s some background on David Barton’s vision for America, chock full of Biblical interpretations supporting right-wing public policies. Barton spoke to the Iowa Christian Alliance not long ago (click that link to watch videos). Former presidential candidate Ron Paul is headlining a fundraiser for Sorenson on November 14, by the way.

Revive the Iowa Food Policy Council

Over the weekend I talked with lots of people who attended the Community Food Security Coalition’s annual conference in Des Moines. Good programs in Iowa and other states are encouraging more people to eat food produced on nearby farms. Iowans have long supported our farmer’s markets, but we could be doing more to promote and expand our local food networks.

One step in the right direction would be for Governor Chet Culver to revive the Iowa Food Policy Council, which functioned from 2001 to 2004. (The council’s reports are available here.) Hear me out after the jump.

Iowa local foods thread

Congratulations to the Iowa Food Cooperative, which is among 86 recipients of U.S. Department of Agriculture grants under the 2009 Farmers Market Promotion Program. If you live in the Des Moines area, check out what the Iowa Food Cooperative has to offer.

I missed the latest “Sample Sunday” at three farms near Woodward, because my kids wanted to go to the “Renaissance Faire” instead. (Couldn’t do that on Saturday because of Rosh Hashanah, the Jewish New Year.) I admit that I enjoyed the combination of civil society and “fakelore” at the “faire,” but I would have rather been eating Northern Prairie Chevre cheese and Picket Fence Creamery ice cream than carnival food.

In August and September I absolutely love my weekly boxes of vegetables from One Step at a Time Gardens. Not long ago the largest kohlrabi I’ve ever seen showed up in one box. Apparently it is some kind of European variety that grows very big. I have farm-fresh, chemical-free potatoes as well, so it looks like I’ll be making kohlrabi and potato soup with caraway seeds this week, for the first time since last season.

You can find locally-grown fruits and vegetables in more and more major Iowa grocery stores, but you can often pay less for fresher food by buying directly from farmers. This page lists 126 farmers markets and fruit stands in Iowa. Many other farmers sell out of their trucks in urban parking lots or along country roads.

If you live in northeastern Iowa, I highly recommend the 2009 Buy Fresh Buy Local Food Directory, published by the Northern Iowa Food & Farm Partnership (NIFFP) at the University of Northern Iowa Center for Energy & Environmental Education. This guide covers grocers, farmers markets, local food producers and restaurants that serve local foods in Allamakee, Benton, Black Hawk, Bremer, Buchanan, Butler, Chickasaw, Fayette, Floyd, Grundy, Mitchell and Tama counties. To download, go to the UNI’s Center for Energy & Environmental Education site, clicking on “Local Foods” and scrolling down to “Find Local Foods Near You.”

The Iowa Network for Community Agriculture has lots of good links here for consumers interested in local foods.

If you find it hard to incorporate seasonal foods in your diet, it may help to change some of your shopping and cooking habits.

The freshest and most economical food is the food you grow yourself, but I can’t help you there. Our yard is too shady for a garden, and even the tomato plant on our deck was a total failure this summer.

Thicke to announce bid for Secretary of Agriculture

After a few months of exploring the possibility, Francis Thicke is ready to announce his candidacy for Iowa Secretary of Agriculture in 2010. He’s scheduled press conferences in Cedar Rapids, Des Moines and Ottumwa on September 9.

Thicke’s campaign website outlines his “new vision for Iowa agriculture,” which involves more local food production, on-farm energy production, and “animal production systems that are profitable, environmentally sound, and socially responsible.”

You can see from his bio how qualified he is for the position as an organic dairy farmer, educator and public servant.

There’s also a blog on the campaign website; recent posts include this endorsement from Denise O’Brien, founder of the Women, Food and Agriculture Network and Democratic nominee for Iowa Secretary of Agriculture in 2006.

Thicke will be an underdog against incumbent Bill Northey, who after considering a bid for governor announced this summer that he’ll run for re-election instead. Industrial agriculture interests generously funded Northey’s 2006 campaign and will fight hard against Thicke. If you can afford to contribute to Thicke’s campaign, his ActBlue page is here.

This is one of those rare cases when a down-ticket candidate might help Democrats higher up the ballot. Thicke’s candidacy is likely to become a focal point for Democratic activists who are (to put it mildly) not satisfied with Governor Chet Culver or Democratic legislative leaders on environmental issues. Some of these people would not volunteer for Culver’s campaign or their local statehouse incumbent, but they will be happy to help GOTV for Thicke.

In case anyone’s wondering, the name is pronounced “Tic-kee.”

Iowa Citizens for Community Improvement is holding its annual convention this Saturday, July 18, at the Hotel Fort Des Moines:

Iowa CCI’s statewide annual convention will feature workshops and plenary sessions on factory farming, campaign finance reform, immigration reform, and predatory lending. The convention will conclude with an exciting direct action targeting an undisclosed payday lender in a low-income community in  Des Moines.

Braley will discuss the draft House health care reform bill, listen to constituents’ concerns, and take questions.  Braley is a member of the House Energy and Commerce Committee, the committee in charge of authoring healthcare reform legislation.

July 4 links and American patriots

Happy Independence Day to the Bleeding Heartland community! I’m hoping for dry weather today after rain soaked parade-goers in West Des Moines last night.

How are you celebrating the holiday? Charles Lemos listens to the Broadway musical 1776 every year on the 4th of July. Sounds like a good tradition.

Over at Slate, Troy Patterson made the case against fireworks.

I enjoy big fireworks displays, but I don’t like amateurs messing around with firecrackers. Not only are those dangerous, they can be very upsetting to veterans with post-traumatic stress disorder:

These days I dread the 4th. It’s not for the jingoism I was too young to understand as a child, which irks me, but I try not to let other’s infantile politics change the spirit of the holiday for me.  The real reason is I’m not much for fireworks anymore.  I haven’t been since I came back from Iraq. […]

Not the big, professional kind.  While I don’t enjoy them nearly as much as I used to, I can observe them with no apprehension.  It’s the amateur fireworks I can’t stand.  The whistling, popping, exploding-at-random-intervals kind that rub my nerves raw.  All of my neighbors, it seems, are fireworks enthusiasts, and every 4th they come out of the woodwork.  The night’s events bother my dog less than me, while I spend the evening on pins and needles, jumping at every explosion, transported for a split-second back to that hellhole until I remind myself that I am home, that I am safe, that I survived.

If you know a veteran of this or any other war, take a moment tomorrow to make sure that they are all right, that the images of horror and death don’t weight too heavy on them.  That they are as close to normal as they’ll ever be.

I never thought about that until I read this post by Steve Gilliard on Independence Day three years ago:

Personally, I hate fireworks, the noise, the explosions. Always reminded me of Pathfinder Force over Germany. Don’t much like the 4th of July either.

But I just wanted to say that for a lot of people, this is a very tough day, especially with PTSD. While everyone else is celebrating, they’re either alone, or pretending nothing is wrong. And every firecracker reminds them exactly what is wrong, and why they aren’t the same.

It’s easy to talk about sacrifice on the 4th of July. But who talks about what people live with?

Final note: military service isn’t the only way to serve your country. In my book, Rob Marqusee is a true American patriot. I’m inspired by his personal commitment to improving health and economic vitality in his community. Marqusee recently completed his “local food challenge,” and I recommend reading his online journal about the experience.

Few people will take on the challenge of eating a completely local diet, but small steps by many to eat more local food and buy from locally-owned shops will make a difference.

Most people kept it civil, but some weird group of wingnuts filled their yard with signs about Obama being MARXIST and shouted “Obamanation!” at the Polk County Democrats as we passed by. Events coming up this week

There’s a lot going on in central Iowa this weekend. If you’ve never been to the Des Moines Arts Festival, head downtown to check it out. Bonus tip: If you love art, check out the “other art show” in the Varied Industries Building at the State Fairgrounds this weekend. You’re more likely to find art you can afford there. I go every year to buy note cards with art photography or reproductions of paintings. I also like to look at children’s clothing decorated by a batik artist (she also sells women’s clothes).

This is an unusually busy week in Iowa politics, considering that’s summer in a non-election year. Governor Chet Culver is taking a campaign train to several western Iowa locations today (Wednesday). Mississippi Governor Haley Barbour is headlining a Republican event on Thursday. The Iowa Democratic Party’s Hall of Fame awards ceremony is on Saturday.

Something for vegans, something for carnivores

I watch the Food Network sometimes while I’m exercising, and in the past two weeks I’ve seen Giada and the Barefoot Contessa make risotto on their shows. They both insisted that you “have” to put cheese in your risotto, and I think they added cream as well.

I couldn’t disagree more, so I’m re-posting one of my favorite food substitutions:

To make risotto with no milk or cream, I use a tip from the Moosewood Collective’s Low-Fat Favorites cookbook. In a food processor or blender, combine a cup or two of frozen corn kernels with whatever kind of stock you will use to cook the risotto. This creates a creamy consistency, but without being as heavy as risotto with cream. It’s good for vegans or anyone cutting back on calories.

I like to stir basil pesto into my risotto right before serving, but you can make that without cheese as well.

For the carnivores in the Bleeding Heartland community: on Thursday I cooked a flank steak (local and 100 percent grass-fed) using a recipe from Cynthia Lair’s article on grass-fed beef in the March-April 2009 issue of Mothering magazine. It comes from her book Feeding the Whole Family. You use a little of the dressing as a marinade; the rest is supposed to go on a noodle salad, but I saved it to pour over the leftover meat:

2 Tbsp toasted sesame oil, 3 Tbsp tamari, 3 Tbsp balsamic vinegar, 1 Tbsp maple syrup, 1 Tbsp hot-pepper oil.

It only took a minute to stir together the ingredients, and if you don’t eat meat, you could use this dressing for a vegetarian or vegan stir-fry or noodle salad.

What have you been eating or cooking lately? I am not a big salad eater for most of the year, but I am loving the fresh mixed greens I’ve been getting from One Step at a Time Gardens this month.

Links to help you find local foods in Iowa

The weather was perfect on Sunday for visiting three farms near Woodward in central Iowa. Yesterday I picked up some grass-fed beef from Wallace Farms. Today I’m looking forward to my weekly box of vegetables from One Step at a Time Gardens. So, it seemed like a good time for another post on finding and eating local food.

For inspiration, check in on Rob Marqusee’s local food challenge. For the whole month of June, Rob is eating only food grown within 100 miles of the Woodbury County Courthouse (located in Sioux City, Iowa). Also, he is not eating any meat. As you can see from his journal (scroll down for the most recent updates), he’s eating well and feeling great despite the “sad moment” when he used up the last bit of his blue corn flour for pancakes.

Few of us are as committed or ambitious as Marqusee, but that doesn’t mean we can’t significantly change the way we eat. A few shifts in your attitude, shopping and cooking habits can make a big difference.

Although your nearby grocery store may sell some local fruits and vegetables in the summer, your best bet is to find a way to buy directly from farmers. This page lists 126 farmers markets and fruit stands in Iowa. Many other farmers sell fresh food in urban parking lots or along country roads.

If $2,500 is burning a hole in your wallet, you can meet House Speaker Nancy Pelosi today (Saturday) at the fundraising luncheon for the Democratic Congressional Campaign Committee at Roxanne Conlin’s house in Des Moines. Representatives Bruce Braley, Dave Loebsack and Leonard Boswell are co-hosting the event. I am not giving to the DCCC until they graduate Boswell from the “Frontline” program for vulnerable incumbents. He is not threatened in 2010 and should pay his DCCC dues like the other safe Democratic incumbents.

I was amused by the boilerplate Republican cheap shot regarding Pelosi’s visit:

Republican Party of Iowa Executive Director Jeff Boeyink said he’s surprised any Iowa congressional Democrats would want to appear with her. […]

“We don’t think her values are Iowa values,” Boeyink said.

I guess Boeyink hasn’t seen recent nationwide polls showing Democrats still have a wide lead on the generic Congressional ballot. Since Iowa votes fairly closely to the national average, I’ll bet Republican House leaders are less in line with Iowa values than Pelosi.

Dave Murphy is working to strengthen rural economies

The Des Moines Register profiled Dave Murphy of Food Democracy Now in Monday’s edition. The article mentioned the incredible success of the petition signed by more than 94,000 Americans. Two of the “sustainable dozen” candidates whom Food Democracy Now recommended for U.S. Department of Agriculture posts now work for the department. Drake Law Professor Neil Hamilton, also on the sustainable dozen list, is an “informal adviser” to Secretary of Agriculture Tom Vilsack.

You should read the whole Des Moines Register article. The most important passage is about how Murphy makes the case for changing agriculture policies:

[Murphy] pointed to a survey from the Organic Trade Association that showed that the U.S. sales of organic food grew nearly 16 percent between 2007 and 2008 to reach $22.9 billion. Organic foods now account for about 3.5 percent of all U.S. food sales.

For Murphy, sustainable farming is about more than the food.

He sees it as returning to a model of production that is better for the environment and one in which farmers can start without taking on deep debt to finance heavy equipment.

He said the agricultural policies today are stacked against farmers of small- to mid-sized farms in favor of larger operations. […]

Murphy stressed that he isn’t against large farm operations. He said sustainable practices can help farms of all sizes.

But Murphy does believe that the playing field ought to be leveled, for the benefit not just for smaller farms but for rural areas in general.

“That’s the best way to improve rural economies,” he said. “The more farmers there are on the land, the better it is for rural economies.”

Health and environmental concerns sparked my interest in buying local food produced sustainably, but Murphy is wise to connect the dots between agriculture policies and the economic future of rural areas. Speaking of Iowans who are incredibly committed to helping small and medium-sized farms thrive, Woodbury County’s rural economic development director Rob Marqusee has pledged to “eat only food grown within 100 miles of the Woodbury County Courthouse for the entire month of June 09 (and no meat will be allowed in the diet).” Keep an eye on Marqusee’s Woodbury Organics site next month, because he’ll be blogging about his food challenge.

Seven ways to eat more local food

I admire Rob Marqusee, whose vision and persistence have expanded organic farming and local food networks in northwest Iowa. I saw on the Woodbury Organics site that he is taking a “local food challenge”:

Rob Marqusee, Director of Rural Economic Development for Woodbury County, will eat only food grown within 100 miles of the Woodbury County Courthouse for the entire month of June 09 (and no meat will be allowed in the diet).

I’m not as ambitious as Marqusee, but I try to buy local whenever possible, to support small businesses and reduce my carbon footprint.

Chemical ag group upset about White House garden

Jill Richardson reported at La Vida Locavore that a group promoting the use of chemicals in agriculture is lobbying First Lady Michelle Obama not to make the White House garden organic. They want the White House to “consider using crop protection products and to recognize the importance of agriculture to the entire U.S. economy.”

Jill posted the full text of the Mid America CropLife Association’s letter to the first lady.

It’s notable that conventional farming advocates were unconcerned about First Lady Laura Bush’s insistence that White House chefs cook with organic food. Former executive chef Walter Scheib wrote that Mrs. Bush was “adamant that in ALL CASES if an organic product was available it was to be used in place of a non-organic product.” It’s fine for the Bushes to be closet organic eaters, but very different for the Obamas to promote growing food without pesticides or herbicides. I think Americans will be surprised by how much one organic garden can produce.

More important, as Think Progress noted, the Bush administration’s agriculture policies repeatedly sought to water down organic standards. That hurts organic growers, not conventional growers. It remains to be seen how far President Obama and Agriculture Secretary Tom Vilsack will go in rewriting organic regulations. If I were the Mid America CropLife Association, I would probably also be trying to assure the first lady not to fear chemical-based “crop protection technologies.”

Anyone with an interest in food or agriculture policy should bookmark La Vida Locavore and check it regularly.

Remember the economic case for healthy food

The Washington Post ran a feature in Wednesday’s edition about Iowan Dave Murphy, who founded Food Democracy Now in November. The whole piece is worth reading, but I particularly liked this passage about what Murphy is bringing to the sustainable food movement:

Perception gets you in the door in Washington. But it’s policy that keeps you in the room. The laws that govern food policy, such as the nearly $300 billion Farm Bill and the Child Nutrition and WIC Reauthorization Act that funds the school lunch program, are notoriously complex and political. “As a movement, we have not had nearly enough sophistication on policy,” [author Michael] Pollan said. “We’ve been outgunned by people who understand the Farm Bill.”

Equally important, Murphy says, is to recast the debate about good food from a moral battle to an economic one. Take the school lunch program, which Congress will review this year. Food activists have long argued that more fruits and vegetables from local producers should be included to help improve childhood nutrition. But Murphy says the better way to sell the idea to legislators is as a new economic engine to sustain small farmers and rural America as a whole. Talk about nutrition and you get a legislator’s attention, he said. “But you get his vote when you talk about economic development.”

Murphy is realistic that change won’t come quickly. He knows he is battling huge, entrenched corporations with better connections and more resources at their disposal. To succeed, he must unite grassroots organizations and persuade an array of other interests — health insurers, senior citizens and teacher lobbies, all of which have a stake in healthful eating — to join the fight. “If you want to change the ballgame, you have to address the policies that are responsible for the system we have in place,” Murphy said. “If you change policy, the market will change.”

Economic development isn’t what sparked my interest in eating locally-produced food raised without hormones, antibiotics or toxic chemicals, but it’s definitely the key to bringing policy-makers on board.

I learned that lesson from Woodbury County rural economic development director Rob Marqusee, who talked his county supervisors into approving amazingly good policies to promote local foods and organic farming. Marqusee runs the Woodbury Organics website, a superb resource on what I call the cold-blooded capitalist case for local foods.

On a related note, look what sustainable food producers have done for the economy of Hardwick, Vermont, an industrial town that fell on hard times during the 20th century. (Hat tip to La Vida Locavore diarist JayinPortland.)

The Obamas will grow vegetables on the White House lawn

Saw on Populista’s Twitter feed a link to great news from the New York Times:

On Friday, Michelle Obama will begin digging up a patch of White House lawn to plant a vegetable garden, the first since Eleanor Roosevelt’s victory garden in World War II. There will be no beets (the president doesn’t like them) but arugula will make the cut.

While the organic garden will provide food for the first family’s meals and formal dinners, its most important role, Mrs. Obama said, will be to educate children about healthful, locally grown fruit and vegetables at time when obesity has become a national concern.

In an interview in her office, Mrs. Obama said, “My hope is that through children, they will begin to educate their families and that will, in turn, begin to educate our communities.”

Twenty-three fifth graders from Bancroft Elementary School in Washington will help her dig up the soil for the 1,100-square-foot plot in a spot visible to passers-by on E Street. (It’s just below the Obama girls’ swing set.) Students from the school, which has had a garden since 2001, will also help plant, harvest and cook the vegetables, berries and herbs.

Almost the entire Obama family, including the president, will pull weeds, “whether they like it or not,” Mrs. Obama said laughing. “Now Grandma, my mom, I don’t know.” Her mother, she said, would probably sit back and say: “Isn’t that lovely. You missed a spot.”

Urban gardens are becoming more popular, and I’m happy that the Obama will set a good example at the White House.

Farmers shouldn't need a special permit to hold a field day

If you’ve ever attended a farm tour, farm field day or other harvest event at an Iowa farm, you be concerned by the action alert I received yesterday from the Iowa City-based non-profit Local Foods Connection.

Last fall the Johnson County Planning and Zoning board determined that Susan Jutz would need a “special event” permit if she wanted to hold a harvest celebration at her farm in Solon. She canceled the event because of the expense of obtaining a special event permit and because she did not want to set a precedent that farm tours and celebrations went beyond “accepted agricultural practices.”

Iowa shows growth in small farms

Bleeding Heartland user EltonDavis recently posted about his plans to start a community-supported agriculture (CSA) farm on land he is leasing.

Turns out he has plenty of company:

The U.S. Agriculture Department counted 92,856 farms in Iowa in 2007, up from 90,655 in 2002, the largest number since 1992. USDA conducts the census every five years.

The numbers suggest there could be a revival in small-scale agriculture. The number of farms reporting sales of $10,000 or less was up sharply in 2007.

Sally Worley, a spokeswoman for Practical Farmers of Iowa, said the increase reflects the growing demand for locally produced foods.

“Farmers are trying to start operations to meet that demand. We really have seen a change in the Iowa landscape of farming” with the comeback of small-scale operations, she said.

But Mike Duffy, an economist at Iowa State University, noted that the biggest increase is in very small operations, with less than $1,000 in annual sales.

There were 23,698 of those in 2007, up from 19,668. The USDA census takers may be finding small farms that were already there but not counted previously, he said.

The news is not all good. Medium-sized farms continue to disappear, and large farms with more than $1 million in sales account for a growing share of Iowa’s total agricultural production.

Still, I’m happy to see that small-scale farming is on the increase. Iowans love to buy locally-grown food; we have more farmers’ markets per capita than any other state.
